3 lbs yellow summer squash (crookneck)
1 onion, chopped
1 1/2 teaspoons salt, divided
1 (10 3/4 oz) can cream of chicken soup
1 (8 oz) container sour cream
1/4 cup fresh chives
1/2 cup panko breading
1/2 cup french fried onions
2 Tablespoons melted butter
1/4 teaspoon ground pepper
- Preheat oven to 350 degrees. Slice squash and put in a pot. Add onion and 1 teaspoon of salt. Cover with water and bring to a boil. Cook 5 minutes and drain.
- Combine soup, sour cream, 1/2 teaspoon salt and chives. Fold in squash. Put in baking dish.
- Combine panko, fried onions, butter and pepper. Spread over top of the squash.
- Bake 20-25 minutes. Let stand 10 minutes before serving.
