Lamb Burgers with Mint Feta Pesto

WHAT YOU’LL NEED:

  • 2 Tbs. finely chopped shallot
  • 2 Tbs. finely chopped fresh flat-leaf parsley
  • 1 Tbs. finely chopped fresh mint
  • 1 Tbs. Dijon mustard
  • 2 tsp. dried rosemary, crushed
  • 1 clove garlic, minced
  • 1 1/2 lb. (750 g.) ground lamb
  • 1/2 lb. (250 g.) ground beef chuck
  • Kosher salt and freshly ground pepper
  • 6 pita rounds
  • Shredded lettuce for serving

Mint-Feta Pesto

  • 1 cup (1 oz./30 g.) loosely packed fresh mint leaves
  • 2 Tbs. pine nuts
  • 1/8 tsp. red pepper flakes
  • 1/2 cup (4 fl. oz./125 ml.) extra-virgin olive oil, plus more if needed
  • 6 oz. (185 g.) feta cheese, crumbled
  • Kosher salt and freshly ground black pepper
