Buffalo Chicken Ranch Nachos

Ingredients

For the Crispy Chicken
  • 1 ½ pounds boneless, skinless chicken breasts
  • 1 cup Panko-style bread crumbs
  • 2 tsp paprika
  • 1 tsp salt
  • 1/2 tsp pepper
  • 6 Tbsp (3/4 stick) unsalted butter, melted
For the Buffalo Sauce
  • ½ cup hot sauce
  • 2 Tbsp corn starch
  • 1 Tbsp brown mustard
  • ½ cup (1 stick) unsalted butter
  • 1 ½ Tbsp white vinegar
  • ½ tsp Worcestershire sauce
  • pinch garlic powder
For the Nachos
  • 1 bag tortilla chips
  • 2 cups Mexican blend shredded cheese
  • 1 stalk celery, very thinly sliced
  • 1 cup blue cheese, crumbled
  • 1/4 cup green onions, sliced
  • 1/3 cup ranch dressing

Instructions

For the Crispy Chicken
  1. Cut chicken into strips about ½” x 1 ½”. Rinse chicken with cold water and then pat dry with paper towels. (Tip: Make sure the chicken strips are approximately the same size. This will ensure that they cook in the same amount of time.)
