Our internet was out yet again last night so here’s a recipe for last night.
I tried this salad out and it came out really good. Looks nice and has a good tangy zing to it.
2 Tablespoons vegetable oil
2. Tablespoons honey
2 Tablespoons orange juice
1 Tablespoon cider vinegar or white vinegar
1 tsp poppy seed
2 tsp dijon mustard
For the salad, combine:
1 small jicama, julienne sliced-optional
2 kiwi, sliced
1/2 pint strawberries, sliced
8 cups baby leaf spinach
Combine with dressing and serve
