Crock Pot Mashed Potatoes

These were so good, Nate has requested them for our next holiday dinner. I have no arguments since I need less to do when I’m making holiday dinners.

5 pounds of potatoes, peeled and cubed
1 1/2 cups chicken stock
5 tablespoons butter
Pepper and Salt to taste (You can also add garlic, chives, etc to make them ‘loaded’)

Peel potatoes and dice them into 2 inch cubes. Toss them into the slow cooker. Pour your chicken stock over the potatoes and add in butter.  Cook on low for about 6 hours. When the potatoes are soft mash them up and mix well. I used my kitchenaid to mash the potatoes and they came out awesome. I like mine plain, butter and salt, but you can add in all sorts of things to add to this recipe.
