Creamy Cauliflower Bacon Soup

Of all the cauliflower soup I’ve tried, this one is by far the best. I had 3 bowls of it!

Ingredients:

4 strips cooked bacon

1 yellow onion, chopped

2 cloves garlic, minced

1 head cauliflower, chopped

3 cups chicken stock

3 sprigs thyme

1 cup heavy cream

salt and pepper to taste

Directions:

1. Cook bacon and reserve fat. Add chopped onion and garlic with a pinch of salt and sweat the vegetables for several minutes on medium low heat.

2. Once they are soft, add the cauliflower and turn heat to medium. Cook for a few more minutes until cauliflower softens a bit. Add the chicken stock and thyme and bring to a simmer. Cover and simmer on low for 45 minutes.

3. Remove thyme stems and puree with an immersion blender to desired consistency. (Or use a blender to puree and return to pan). Add cream, season with salt and pepper and heat through.

4. Serve with bacon crumbles on top (and/or shredded cheese, yum!)
