1 head cauliflower, trimmed and cut into florets
1/2 teaspoon salt
2 teaspoons butter
1/3 cup panko
1/2 cup shredded, Gruyere cheese
2 Tablespoons chopped fresh chives
1/2 cup finely chopped onion
1 garlic clove, minced
3 Tablespoons flour
2 cups milk
3 Tablespoons chopped fresh parsley
1/4 teaspoon freshly ground black pepper
1. Preheat oven to 400 degrees F. Place cauliflower in a 2 quart broiler safe baking dish, lightly coated with cooking spray. Sprinkle with salt and toss. Bake 30 minutes or until almost tender. Cool 5 minutes.
2. Preheat broiler.
3. Melt butter in a saucepan over medium heat. Remove from heat and stir in panko, 1/4 cup of the Gruyere and chives. Set aside.
4. Heat a medium saucepan over medium-high and spray with cooking spray. Saute onions 4 minutes, stirring frequently. Add garlic, saute 1 minute. Add flour and cook another minute, stirring constantly. Gradually add milk, stirring with a whisk. Bring to a boil. Cook 3 minutes stirring constantly. Remove from heat and stir in remaining cheese, 1/4 teaspoon salt, parsley and pepper.
5. Pour milk mixture over cauliflower and toss. Top evenly with cheese mixture. Broil 3 minutes or until golden brown.
