Dreamsicle Cupcakes

Although I’m looking forward to Fall, I’m savoring the last few weeks of ‘summer’ by indulging in summertime sweets. I like this recipe even more than the orange meringue pie I posted last week.


Cake Ingredients:

1 box white cake mix

1 cup orange sherbet

2/3 cup orange soda

1 cup cake flour

3/4 cup sugar

1 teaspoon salt

1/4 teaspoon baking soda

1 cup sour cream

3 eggs

1/2 cup oil

1 Tablespoon orange extract ( I know this seems like a lot, but it could almost take more)

1. Preheat oven to 325 degrees F. Soft together all dry ingredients in a bowl. Combine wet ingredients seperately.

2. Gradually add dry ingredients while mixing until blended.

3. Scoop into cupcake liners (it’s kind of a sticky recipe, so I highly recommend the papers). Bake 18-20 minutes until a toothpick comes out clean. Cool on rack before icing.

For the filling:

5 Tablespoons flour

1 cup milk

5 Tablespoons sugar

1 teaspoon vanilla

1 dash salt

3/4 cup sugar

1/2 cup butter

1/2 cup shortening

1. Cook flour, milk, sugar and salt in a saucepan until it becomes a thick paste. Whisk while cooking to avoid lumps. Cool

2. Mix butter, sugar and shortening in a mixer. Add in cooled sugar mixture to butter mixture and beat 5 minutes until fluffy.

3. Squeeze into cooled cupcakes.
