Firecracker Cupcakes

These are easy and tasty, just take a box of white cake mix and prepare according to directions. Separate the batter into 3 equal-ish parts and add blue and red food coloring to 2 of them. I particularly like the silicone muffin cups, but make sure to give them a shot of cooking spray. Bake the cupcakes according to the box, mine were 350 for about 17 minutes. When you’re filling the cups, layer the batter as you see fit to make the red white and blue layers. Mine bubbled a bit and got more mottled than layered, but they still look great. I took some shameful shortcuts in this recipe, in addition to boxed cake mix, I  also got pre-made frosting. I needed to make this quick and dirty because I’m in the process of redoing my kitchen. Feel free to substitute a real recipe for the cake and frosting, I’m sure it’d be even better. Pipe that on the top as you like. For the firecracker part: Mix equal parts sprinkles or decorating sugar with pop rocks candy and sprinkle on top. *Note: Sprinkle right before serving or your fizz will have less pop.
