Chocolate Peanut Butter Sandwich Cookies

It’s National Cookie Day and although I just put up a chocolate peanut butter cookie, I couldn’t resist another. This one is much sweeter and I like this one much more than the less sweet buckeye type cookies. I got this recipe from a  neighbor after she brought some over, absolutely dangerous cookies!

*Also, you might consider freezing your cookies. I’ve been doing a batch at a time this year rather than my usual baking blitzkrieg and freezing them until I’m ready to assemble my care packages. They come out looking and tasting just fine.

Ingredients:

1 box chocolate cake mix

2/3 cup vegetable oil

2 eggs

1 cup mini chocolate chips

1 cup chopped peanuts

Filling:

6 Tablespoons creamy peanut butter

1/4 cup margarine

2 cups powdered sugar

3-4 Tablespoons milk

1. Mix cake mix, oil and eggs until smooth. Add chips and nuts, mix to combine.

2. Roll dough into small balls and place on a greased cookie sheet.

3. Bake 10 minutes at 350 degrees F, but don’t overcook. They may look like they aren’t ready, but they are. Cool 3-5 minutes on the sheet before moving. Cool completely on a cookie rack.

4. Mix all filling ingredients and assemble cookie sandwiches. Enjoy!
