Pistachios are one of my mom’s favorite foods, so I decided to make her some baked goods for an early Birthday present (her birthday is Dec 15) and took them down to her over Thanksgiving. These are quite tasty and I love the salty sweet combo. Don’t scrimp on the ground pistachios on top! They make the combo divine.
3 cups flour
1 cup sugar
2 tablespoons baking powder
1 box instant pistachio pudding
2 eggs, beaten
1 1/4 cups milk
1/2 tsp almond extract
3/4 cup vegetable oil
Mix flour, sugar, baking powder and dry pudding mix.
Combine eggs, milk and oil; add to dry mixture and mix until just moistened.
Fill baking cups full.
Bake 20 to 25 minutes at 375 degrees or until muffins test done.
