Apple Cider Muffins

I’ve been missing the apple cider doughnuts we used to get from the apple farm back east, so I whipped up some muffins to try and get the same effect. Unfortunately mine were eaten before I got many pictures, but they are mighty tasty.

You’ll mix:

1 cup water mixed with one packet instant spiced cider mix (or apple cider, but I like the mix flavor)
1 large egg
3 tablespoons melted butter
1 teaspoon vanilla

In another bowl, whisk together:

2 cups flour
1/2 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
3/4 teaspoon freshly grated nutmeg

Keep your wet and dry separate until you’re ready to mix them together. Mix them until just combined, you don’t want to over mix and get dense muffins. Lumpy is good.

For your pan: Grease with butter, Crisco, etc and sprinkle with cinnamon sugar instead of flour for non-stick and tasty results.

Bake at 350 degrees F for 15-18 minutes. Sprinkle tops with coarse sugar half way through for a nice crunchy top.

If you like, you can dip the tops in melted butter and then cinnamon sugar for extra sweetness, but I thought they were fine as they are. These would also take chopped apples and/or walnuts nicely.
