Infamous Apple Pie

This is the best way to get your apple a day, I think. I’ve been making this recipe for years and have been tweaking it along the way. My mom always insists that I bring it with me for Thanksgiving.

Filling:

6 apples (2 granny smith, 2 braeburn or Fuji apples and 1 red delicious), sliced

2 Tablespoons lemon juice

1 Tablespoon flour

½ cup sugar

2 tsp cinnamon

Topping:

1 cup oats

½ cup brown sugar

¼ cup flour

¼ tsp cinnamon

¼ cup butter, softened

2 prepared pie crusts

Directions:

  1. Preheat to 350 degrees.
  2. Combine the sliced apples, lemon juice, flour, sugar and cinnamon and fill the pie shell.
  3. Combine oats, brown sugar, flour and cinnamon. Cut in softened butter.
  4. Cover apple filling with oat mixture.
  5. Cut strips of the prepared pie crust and arrange in a lattice pie top and cover  loosely with foil.

Bake 30 minutes, remove foil. Bake another 20-30 minutes until crust is golden.

You can also drizzle warm caramel over the top or over your slice of pie-heavenly!
