Easy Crock Pot Stew

This recipe is great, you just throw everything in together and 4 hours later, dinner!

You’ll need:

1lb of meat, cubed. Mine looks funny here because it’s elk front quarter (very sinewy meat that can really only be used for slow stews) but it comes out just fine.

2 carrots, sliced (I buy a bunch at harvest, slice them up and freeze them in portioned baggies, same for the celery, seems like I always used to throw away all but a few stalks)

2 ribs celery, sliced

1 onion, rough chopped

8 cups beef broth

1/2 cup pearl barley, rinsed (If you don’t rinse it, the stew will come out looking muddy)

Salt and pepper to taste (I usually don’t bother to add either. Add these at the end, the broth may have added enough salt)

2 Tablespoons fresh parsley (optional)

Throw it all in the crock pot and wait. I usually go for the hotter faster option and cook it on high for 4 hours. If you’ve got the time, you can do low for 8 hours. And you’ve got dinner.
