Potato Chowder

This is a great soup for cold days. It’s basically a loaded baked potato in soup form.


3.5 lbs potatoes, peeled and cubed

1/2 tsp ground pepper

1.5 tsp minced garlic

5 cups chicken broth

8 slices bacon, chopped

2 cups shredded cheddar

1/2 cup whipping cream

1/2 cup green onion, thinly sliced

1/2 cup sour cream


1. In a large pot, combine potato, garlic, pepper and broth. Bring to a boil and reduce.

2. Simmer covered for 20-25 minutes.

3. Mash potatoes slightly. Stir in bacon, 1.5 cups of cheese, cream and green onion and heat through.

4. Top with sour cream and cheese.
