Whoopie Pies

These are the best thing in the world. They are so addictive and sinful! These are traditionally a New England area treat and if you’ve never had one, they are similar to a Oreo Cakester on steroids. I’m considering making a second batch since the first disappeared the day I made them.


2 cups flour

1 cup sugar

1/2 cup unsweetened cocoa

1 tsp baking soda

1/4 tsp salt

3/4 cup milk

6 Tablespoons melted butter

1 large egg

1 tsp vanilla


3/4 cup shortening

2 cups powdered sugar

2 egg whites

a dash of salt

1 tsp vanilla


1. Preheat oven to 350 degrees and grease cookie sheets.

2. In a large bowl, combine flour, sugar, salt, baking soda, milk, butter, egg and vanilla until smooth.

3. Drop 12 heaping Tablespoons 2 inches apart on cookie sheets. Bake 12-14 minutes, until puffy. Cool on rack.

4. Beat shortening, powdered sugar, egg whites and salt until smooth. Add vanilla at the end.

5. Spread filling over cookies to make sandwiches.
