Caesar Salad

I’ve been trying to find a recipe that was well balanced and tasty and have finally found one I think has it all.I added a piece of grilled chicken to give it a little extra.

Caesar Salad


2 heads romaine lettuce

3/4 cup extra virgin olive oil

3 Tablespoons red wine vinegar

1 tsp Worcestershire sauce

1/2 tsp salt

1/4 Tablespoon ground mustard

1 clove garlic, minced

1 egg, coddled

2 Tablespoons lemon juice

freshly ground pepper, to taste

1/4 cup grated Parmesan cheese

1.5 cups garlic croutons

2 tsp anchovy paste


1. Clean, dry and refrigerate lettuce.

2. Combine oil, vinegar, Worcestershire sauce, salt, mustard, garlic and lemon juice in a bowl. Whisk until well blended.

3. Coddle egg by boiling 3 cups water. Drop in egg in shell and cook for 45 seconds. Remove egg from water and let cool. Once cooled, crack open and whisk egg into dressing. Add anchovy paste and whisk to combine.

4. Combine lettuce, dressing, cheese, croutons and toss.
