Raspberry Lambic Ice Cream

I love Raspberry Lambic. It’s a very flavorful beer brewed with raspberries. It’s sweet and tart and tangy. Add in cream and fresh raspberries and you have an addictive flavor of ice cream.


1.5 cups raspberry puree (with seeds)

1/2 cup sugar

1 cup Raspberry Lambic

1 envelope (2 tsp) unflavored gelatin, softened in 3 Tablespoons warm water

1 cup heavy whipping cream (with 2 Tablespoons powdered sugar)

1/2 cup vanilla syrup (buy it made with real cane sugar, or make your own

Ice cream machine


Blend raspberry puree, sugar and lambic. Cover and chill overnight.

Blend the softened gelatin with the fruit mixture and whisk until smooth.

Fold in whipped cream and vanilla syrup. Wisk well and pour into ice cream machine. Follow machine directions.


To make vanilla syrup: Boil 1/8 tsp salt, 1.5 cups water and 1.5 cups sugar on medium high heat until dissolved. Boil 3-5 minutes and stir in2 Tablespoons vanilla extract. Cool.
