Mint Chocolate Chip
This is my favorite flavor so far and I made it up!
1 cup water
1 cup sugar
2 mint sprigs
4 egg yolks
1 1/3 cups heavy cream
2 egg whites
1 cup chocolate chips
1. Put water and sugar in a saucepan and bring to a boil. Simmer 5 minutes and remove from heat. Add mint and let cool completely.
2. Whisk the egg yolks until pale and creamy. Pour in syrup in a steady stream while whisking.
3. Beam the cream until it holds soft peaks and store into the mixture. Beat the egg whites until stiff and fold them in. Churn in an ice cream machine according to maker directions. After mixture has set, add in chocolate chips.
