Pasta Carbonara

This is the best carbonara recipe I’ve come across. Still could use a little something, but pretty good.


1 Tablespoon Olive Oil

3 Tablespoons Butter

2/3 cup diced pancetta or unsmoked bacon

3 eggs, beaten

2 Tablespoons milk

1 Tablespoon thyme, stems removed

12 oz pasta

1/2 cup grated Parmesan

Salt and Pepper to taste


1. Heat oil and butter in skillet until mixture begins to froth.

2. Add bacon and cook 5 minutes.

3. Mix together eggs and milk in a bowl. Stir in thyme and salt and pepper.

4. Cook pasta according to box directions for al dente.

5. Add the cooked, drained pasta to the skillet with the eggs and cook over high heat for 30 seconds. Add half of the cheese and stir.

6. Serve with remaining Parmesan on top.
