Lavender Ice Cream

I just got a new ice cream maker and I’ve been experimenting. We had lavender ice cream at the Squim Lavender festival and it was awesome! This is pretty good, but I’m still working on it.


1 cup water

1 cup sugar

1 Tablespoon lavender flowers

4 egg yolks

2 egg whites

1 1/3 cups heavy cream


1. Put water and sugar in a heavy pan and bring to a boil. Simmer 5 minutes and remove from heat. Stir in lavender flowers and let stand until cool. Strain.

2. Whisk the egg yolks until pale and creamy. Pour in the syrup while whisking.

3. Beat the cream until it holds soft peaks and add syrup mixture. Beat egg whites until stiff and fold in.

4. Add to ice cream machine and follow machine directions. You may have to transfer the ice cream into a storage container and freeze overnight to set.
