Bacon wrapped trout

I decided to try something different with trout. This is pretty good. Maybe a little too strong on the mint.


4 trout, drawn and cleaned

12 anchovies in oil, drained and chopped (you can probably get away with not using these)

2 apples, peeled, cored and sliced

4 fresh mint sprigs

Juice of 1 lemon

12 slices smoked bacon

salt and pepper


1. Preheat oven to 400 degrees and grease a baking dish.

2. Rinse out trout cavities and season with salt and pepper. Divide anchovies, apples and mint springs between each cavity. Sprinkle lemon juice into each cavity.

3. Wrap each trout, except for the head and tail with 3 slices of bacon in a spiral. (You may want to use toothpicks to keep them in place)

4. Arrange fish in the pan with loose ends of bacon tucked under. Season with pepper and bake for 20 minutes. Turn halfway through.
