Fish Tacos

I’ve been looking for a good recipe for fish tacos and I finally found this one. Cabo says it’s better than anything he’s ever had in a restaurant.



1 cup sour cream

1 Tablespoon chopped fresh cilantro

1 Tablespoon lime juice

1 teaspoon packed brown sugar

1 chipotle chile in adobo sauce, chopped (I substituted Cayenne pepper and olive oil)


1 cup flour

1/2 teaspoon salt

1/2 teaspoon ground cumin

1/4 teaspoon baking powder

1/4 teaspoon garlic powder

3/4 cup beer

1/4 cup ice water

Vegetable oil

1 lb Halibut, flounder or cod

6 flour tortillas


Toppings: Pico de Gallo salsa, shredded lettuce, avocado, cheese, lime, cilantro

1. Mix all sauce ingredients and set aside

2. Mix flour and spices together. Add beer and water and whisk until no dry flour is visible.

3. Heat 1 1/2 inches of oil to 375 degrees (boiling, but not smoking). Dip fish in batter and fry in oil 3 minutes on each side.

4. Assemble to your liking and top with salsa, avocado, cheese, lime, cream sauce, etc.
